Character and attitude is innate, skill is fluid. During the interview process, describe different scenarios and ask the candidate how she/he will react to the situation. You will be able to see how they perceive the situation, what is their priority, do they look at it as a challenge/obstacle and do they find it humorous and a learning experience.

Basically a conversation to make sure you weren't an idiot... They were so desperate for workers (because crazy turnover) that there wasn't a lot of formality to the interview. Talk about previous work experience (I had little restaurant experience), studies if you were in school etc
